Vegetarian Chili

Homemade chili is always a big hit. Whether it’s for the family, a big get together or just a simple one or two person dinner, homemade chili fits the bills. A spoonful of that deliciously warm chili is like a spoonful of nostalgia. Here are ten super easy ways to cook your favorite dish!

Basic Chili

Basic Chili

Ingredients:

  • 1 chopped onion
  • 1 dash of olive oil
  • 1 pound of ground beef
  • 1 can of stewed tomatoes
  • 1 can of tomato sauce
  • 1 can of kidney beans
  • 1 1/2 cups of water
  • A pinch of garlic powder (or 2 cloves of fresh garlic, pressed)
  • A pinch of chili powder
  • Salt and pepper to taste
  • Handful of grated cheese

Instructions:

Pour a dash of olive oil into a saucepan, and cook the beef and onions over a medium heat. Mix through and cook until browned. Add the stewed tomatoes, tomato sauce, kidney beans, and water. Cook until heated through and then mix in the spices. Bring the chili mix to the boil, and then simmer for 15 minutes. Sprinkle cheese on top.

Beef Bread Bowl Chili

Beef Bread Bowl Chili

Ingredients:

  • 1 pound of ground beef
  • 2 cloves of minced garlic
  • 1 chopped onion
  • 2 cups of crushed tomatoes
  • 2 cups of beef broth
  • 1 cup of frozen corn
  • 2 teaspoons of cumin
  • 1 teaspoon of chipotle powder
  • 2 teaspoons of chili powder
  • Salt and pepper to taste
  • 4 sourdough bread rolls
  • 1 cup of grated cheese
  • 1/3 cup of chopped green onions
  • 1 cup of sour cream

Instructions:

Preheat your oven to 350 degrees Fahrenheit. Over medium heat, cook the beef and onion in a large pot until browned. Add the tomatoes, beef broth, corn, and spices, and cook for another 10 minutes.

Whilst they are simmering, cut a hole in the tops of your bread rolls and scoop out 3/4 of the soft bread. Toast them for 10 minutes. Once the chili is cooked and cooled, top with cheese, sour cream and green onions. Done!

Simple Turkey Chili

Simple Turkey Chili

Ingredients:

  • 2 jars of salsa
  • 1 pound of ground turkey, browned
  • 2 cans of chili beans
  • 1 medium onion, diced

Instructions:

Brown the turkey and onions in a pot over the stove. Add the chili beans and salsa. Simmer for 15 minutes. Done! Add sour cream and cheddar cheese on top if desired.

Chili Mac and Cheese

Chili Mac and Cheese

Ingredients:

  • 1 chopped onion
  • 1 dash of olive oil
  • 1 pound of ground beef
  • 1 can of stewed tomatoes
  • 1 can of tomato sauce
  • 1 can of kidney beans
  • 1 1/2 cups of water
  • A pinch of garlic powder (or 2 cloves of fresh garlic, pressed)
  • A pinch of chili powder
  • Salt and pepper to taste
  • 12 oz. pasta shells
  • 2 cups of shredded cheese

Instructions:

Pour a dash of olive oil into a saucepan, and cook the beef and onions over a medium heat. Mix through and cook until browned. Add the stewed tomatoes, tomato sauce, kidney beans, and water.

Cook until heated through and then mix in the spices. Bring the chili mix to the boil, and then simmer for 15 minutes. Separately, cook the pasta in a pot of boiled water until al dente. Usually takes about 13-15 minutes. Mix pasta and cheese into chili dish.

Easy Chili on Rice

Easy Chili on Rice

Ingredients:

  • 1 pound of ground beef
  • 1 chopped onion
  • 1 garlic clove
  • 1 can of tomato sauce
  • 1 tablespoon chili powder
  • 1 can kidney beans
  • 1 cup of rice
  • 1 cup water
  • Salt and pepper to taste

Instructions:

On a stove top, cook the beef and onion until browned. Add the rest of the ingredients. Bring to boil and then simmer for an hour. Put rice and water in a rice cooker and leave it to cook. When all is finished, place the chili on the rice.

Chicken Ranch Chili

Chicken Ranch Chili

Ingredients:

  • 1 tablespoon of extra virgin olive oil
  • 1 large chopped onion
  • 2 garlic cloves
  • 2 teaspoons of oregano
  • 2 teaspoons of ranch seasoning mix
  • 2 cups of shredded rotisserie chicken
  • 3 cups of chicken broth
  • 2 cans of kidney beans
  • 1 cup of chopped green chilies
  • Salt and pepper to taste

Instructions:

In the olive oil, cook the onion, garlic, oregano and ranch mix in a saucepan until the onions have browned. Add the chicken and chicken broth. Bring to the boil and then reduce to a simmer.

In a separate medium bowl, mash the beans and then add them to the mix. Add salt and pepper and simmer for 20 minutes. Garnish with lime juice, sour cream and cheese if desired.

3 Ingredient Chili

Ingredients

  • 1 can of chili beans
  • 1 can of chili ready diced tomatoes
  • 1 pound of ground beef

 Instructions:

On your stove top, cook the beef in olive oil until browned and cooked through. Add the tomatoes and beans, bring to the boil and then simmer for 30 minutes. Add sour cream and cheese if desired!

Texas Chili

Texas Chili

Ingredients:

  • 8 slices of bacon
  • 1 3 pound beef chunk roast cut into cubes (fat removed)
  • 1 large onion
  • 2 minced jalapeños
  • 2 cloves of garlic
  • 2 tablespoons of tomato paste
  • 1 tablespoon of chili powder
  • 1 can of crushed tomatoes
  • 1/2 cup of lager beer
  • 32 oz. low sodium beef broth
  • 2 cups of water

Instructions:

In a saucepan, cook the bacon until crispy and golden in a dash of olive oil. Leave aside on paper towels to let some of the remaining oil soak. Add the beef chunk roast cubes to the pot and sear until browned.

Put to the side. Mix the onion, jalapeños, and garlic in the pot for 5 minutes. Add the rest of the ingredients and let them cook together for another 5 minutes. Bring to the boil and then simmer for 2 hours to let the meat get tender.

Vegetarian Chili

Ingredients

  • 4 corn tortillas
  • Olive oil
  • 1 chopped onion
  • 1 diced red pepper
  • 1 diced yellow pepper
  • 3 cloves of minced garlic
  • 2 tablespoons of chili powder
  • Salt and pepper to taste
  • 1 can of tomatoes
  • 1 can kidney beans
  • 1 can black beans
  • 1 can pinto beans
  • 1/2 cup sour cream
  • Cheddar cheese to serve

Instructions:

In a 400 degree Fahrenheit oven, cook the corn tortillas after they have been brushed in oil. Flip over after 6 minutes and cook until desired. In a large pot, cook the onions, pepper, garlic, chili powder salt and pepper in a dash of olive oil.

Once the onions are browned, add the tomatoes and beans. Add 2 and a half cups of water and bring to the boil. Simmer for 15 minutes. Once cooled, add sour cream and cheese.

4 Ingredient Chicken Chili

4 Ingredient Chicken Chili

Ingredients

  • 4 cans of kidney beans
  • 2 cans of white chicken meat
  • 1 jar of picante sauce
  • 8 ounces of pepper cheese

Instructions:

Put the ingredients in a slow cooker on high for 2 hours and then on low for 2 hours. Stir every half an hour. Serve with tortilla chips if desired!
